What is on the menu

The vegan menu at Koyal runs alongside the main a la carte and includes a full three-course progression. Starters lean into the chaat tradition - sweet potato and kale chaat, quinoa and beetroot tikki, pani puri. Mains include dal maharani (slow-cooked black lentils in butter tomato), khatte meethe baingan (baby aubergines with tamarind), and a jackfruit biryani layered with cashew masala.

Every dish is cooked separately to avoid cross-contamination with dairy or ghee. Where butter is traditional - in our dal maharani for instance - the vegan version is built around a coconut and plant-fat base that delivers the same richness without compromise.

Why this matters

Most Indian restaurants treat vegan as a footnote: take the chicken out of the curry, swap dairy for soy, and call it done. The result is usually a dish that has lost its soul. Koyal's approach is the opposite - we built the vegan menu from dishes that were already plant-based in their traditional form, then refined them with the same kitchen techniques we use across the rest of the menu.
